Chiman’s Chicken Madras


Our hottest chicken dish – but still not overdone on the chilli front giving plenty of punch while retaining the glorious taste of all the spices in the blend in the tomato based sauce. Quick and simple to prepare.

Chicken Madras

Preparation time: 10 minutes
Cooking time 30 minutes

  • 1 large onion, coarsely chopped
  • 75ml/5 tbsps vegetable oil
  • 900g/2lbs chicken joints
  • 4 cloves garlic, crushed
  • 1 small tin tomatoes
  • Fresh coriander to garnish

1 .Heat the oil over a medium heat and fry the garlic and onions until golden brown. Add spices and sizzle for 2 minutes.
2. Add the tomatoes and simmer for 2 minutes. Add the chicken and cook for 5 minutes, turning occasionally. Add 180ml/6fl oz water and simmer, stirring occasionally until the chicken is tender. Season to taste.
3. Serve garnished with fresh chopped coriander

For a delicious meal serve with Chiman’s Dal, Chiman’s Aloo Gobi, basmati rice, rice, pickles and a green salad
